Breakfast Muffin
Get that Maccas craving sorted without the calories
INGREDIENTS
(Serves 1)
- English Muffin: x1 muffin (I use Tip Top)
- 97% fat free ham: 31g (I use Don Double Smoked Leg Ham – about 3 slices)
- Jumbo egg: x1 (I use Sunny Queen Farms free range jumbo)
- Light cheese slice: x1 (I use Bega Country Light Tasty – 50% Less Fat)
- Baby spinach leaves: 10g
- Low sugar BBQ or tomato sauce: 5g (I use Fountain No Added Sugar BBQ sauce or Masterfoods Reduced Salt and Sugar Tomato Sauce)
- Salt and pepper: to taste
INSTRUCTIONS
- Heat the ham in a non-stick frying pan over medium to high heat – don’t overcook or it will become chewy.
- Pan fry the eggs in a non-stick frying pan with a light spray of coconut oil over medium to high heat. Salt and pepper to taste and cook to your liking.
- Lightly toast the English muffin on a sandwich press or in a toaster.
- Place the cheese slice on one half of the muffin and microwave until slightly melted.
- Top the muffin with ham, egg, sauce, baby spinach and other half of the muffin.
